Fried Hake and Savoury Rice

You know how sometimes things don’t make sense, I mean one moment you are certain you are on a right path, things are working out for you then the next you just don’t understand what is happening. I’ve been there a couple of times and listen to what His Word says: we KNOW, my oh my, just that one word is enough for me, the fact that we do not assume or hope or imagine; WE KNOW. We are convicted within our minds, hearts and entire beings that indeed God is out there using everything that happens to us whether it is confusion, good, bad or detours to bring something good. Let’s never doubt that us being chosen by Him to serve Him guarantees us peace in the midst of all that happens because WE KNOW it happens for our good. I hope this encourages you as much as it did me.

Tonight we are wrapping up our #SeafoodTheme, is it me or did it go on and on and on. It did because I have two meals that were not fortunate enough to be featured as blog posts but I will share their pictures here😊

First was hake medallions in sweet chili and oyster sauce served with rice, lentils and a salad.

The other one was the infamous Fish and Chips. Made by yours truly👩‍🍳

Now back to the meal of the night. I started by preparing my vegetables with our favorite vegetables stock from Woolworths.

Added my cooked basmati rice and mixed it well with the vegetables. Tell me if this doesn’t scream “eat me now”🤤

One day soon I will have a good fryer, one day very soon I repeat. Anyways I used Southern Coating for my hake, the instructions are on the pack😉. I thought I’ll grill but ended up frying it.

Made a coleslaw on the side.

Seafood Paella

I believe the Holy Spirit led me to this verse to remind me that we need each other as we embark on our servitude journeys, I mean we are serving His people right and in that way we have to be able to carry each other’s burdens one way or the other. I was reminded particularly of this when I introduced the weeks’ theme. Some people really look forward to what is next in our kitchen💁🏽‍♀️ so when I introduce a theme they are quick to think of things I should definitely try and that to me is a definition of bearing one another’s burdens and by doing so the law is fulfilled because Jesus wants us to be of help to each other at the end of the day.

I’m thankful to Zinzi for suggesting I try PAELLA; to tell you the honest truth I had no idea what it was but I was adamant to search for it and find it so I can try it out because there was no way I could be making the same old hake for the whole week😂

Off I went to the shops in pursuit of Paella, I was hoping for a “Paella Mix”😁 lo and behold I found it at Pick n Pay.

NB: Drain all the water on a paper towel.

First things first – yes you guessed it. Peppers😀 in a Masala spice.

I then mixed them with my Paella, fried the mixture together for a while then added a chicken stock, let it simmer.

I made basmati rice on the side then added it to the Paella.

Fried Rice with Wings

I legit take this blog as a form of serving, I say it over and over again to myself when I don’t “feel” like blogging – that actually this is not at all about me, it is about serving The One who has given me this passion and this gift (it is a gift😊). I couldn’t be more convinced that my energy, my time, my commitment to this blog is a form of serving God and I won’t be lazy, I want to wake up everyday looking forward to and being excited about serving Him.

You know there are meals we hear about or see on Pinterest and think I don’t think I can make that, maybe because we think it’s out of our league or we just won’t enjoy it. I have plenty of those but for this theme it had to be fried rice, it looked so complicated for me but I can’t be cooking rice the old same way on a daily so why not try make fried rice💁🏽‍♀️

Plus the husband bought me proper non-stick frying pans. I’ve been deceived for so long💆🏽‍♀️. I believe my meal is definitely going to make a proper turnout. The pans are Baccarat from https://www.home.co.za

I started off with my vegetables which consisted of bell peppers, green beans and tiny cut carrots, added diced bacon and this Garlic Man (Crushed Garlic and Ginger).

I told you how the husband isn’t a fan of onions right? I used my green onion seasoning from https://www.paarman.co.za instead of real onions.

While that is frying, I quickly marinated my chicken wings to get them ready for the oven. I used these sauces… and put them on the oven.

I started cooking my rice on the side – have you noticed how I don’t take pictures of my rice? I assume we all know how to cook basmati for about 10minutes😅. I mixed it well with the vegetables and started the fun part.

The wings were also ready and oh so yummy.

I opened up a well in the middle and poured my scrambled eggs. Make sure the eggs are medium to well then start mixing everything together and that’s your fried rice😉

Rice, Veggies and a Thigh

Their trust should be in God, who richly gives us all we need for our enjoyment.

I initially thought that this week we will have vegetables and chicken, but I realized when I was preparing my meal that we actually haven’t had rice in a very long time so being a believer of all things given to us for pure enjoyment, why not enjoy rice this week, carbs and all.

First things first – let’s get our chicken thighs marinaded in a quick sauce. I don’t always use store bought marinades because I know I can be creative like that😁, I used a Steers Monkey Gland Sauce, Wellington’s Sweet Chilli Sauce and the ever so tasty Spur Chicken Spice, combinations like these always produce the yummiest results.

Since this is supposed to be a quick dinner, I put my marinaded chicken in the microwave for about 6 minutes because we need all the flavors right. Then straight to the oven.

Then on to the vegetables – you can never go wrong with frozen mixed vegetables hey, they are God’s gift to us🙌🏽. I mixed mine with sweetcorn because #color💁🏽‍♀️. Cooked them with a vegetables stock, garlic, herbs and green onion.
