Chorizo and Prawn Pasta

We are all busy doing this and that but we have to make sure that we find a balance – making sure that I keep up with the vision I have for this blog requires nothing but balance and to think how much God hates a flawed balance makes me want to be more focused because at the end of the day, this isn’t only about me.

I’ve never cooked nor bought chorizo before, I think I saw a post about it from a fellow foodie on Instagram and having a theme like this for an entire week demands one to be on a lookout for a “new” recipe because there’s no way we are having one thing over and over again.

Tonight’s pasta is Macaroni, experimental as we are – we will never forget where we started from.

I literally threw everything in my pan, pepper strips, prawns, chorizo, spices while cooking my macaroni on the side.

Believe it or not, it came out beautifully cooked, added my al dente macaroni; dished up, served and enjoyed 😋😋

I love how the Holy Spirit is able to shut me up when I start coming up with silly excuses – He gently says “babygirl, you have abandoned the passion you had for writing”, but because He is able to restore what the enemy steals from us, yes, even my passion😊 I am back here and I have my priorities back in order🙌🏽.

We are left with only two meals before we close off this #PastaThemedWeek so today we have tagliatelle, it’s my favorite of all time.

I prepared the pasta as per the instructions on its pack💁🏽‍♀️ while I fried my chicken strips in olive oil and seasoned with salt and pepper, we don’t leave herbs behind😋

Can I be forgiven for not taking pictures of the whole preparation – some nights are not like the others but I will definitely improve as we go.

I put a cheese sauce over my pasta and mixed it with the cooked chicken strips.

Cheesy Mince Fusilli

I am not even going to make up an excuse for not posting for such a long time, today’s scripture sums it up so well🙌🏽

We are on our 4th night of #PastaThemeWeek and tonight I thought why not make our old time favorite🤷🏽‍♀️ who doesn’t love pasta and mince? I mean at some point my husband called it “the lazy people’s go-to meal”😮 shocking right, considering that some households have it on a weekly basis because it is yummy and easy to make💁🏽‍♀️😊

Back to my recipe – I did not take any pictures when I was making this meal🤦🏽‍♀️

I fried peppers, added my mince and put in spices (oregano, paprika and barbecue).

Fusilli was prepared according to the instructions on its pack😊, added lots of grated cheese…

I put in tomato and sweet chili sauce to the mince then poured the cooked pasta, mixed it well, after that I dished up💁🏽‍♀️

PenneDrumsticks

So I bought different kinds of pasta because if you plan on having pasta for the whole week, you cannot afford to be making the same type over and over again😅.

Tonight I thought left me pair my penne with drumsticks and see what happens.

First things first, cooked the pasta as per the instructions on its pack then I fried bell peppers and added drumsticks.

Further browned my drumsticks with a soy sauce then added these canned tomatoes (blended them first)

At this point I had all my favorite sauces and herbs mixed together with the gravy and chicken in preparation for my pasta.

Added the cooked penne and my PenneDrumsticks were ready to be eaten 😋😋

To think that I had committed to both myself and friends that I will post once a day – I guess I underestimated how a slight change of routine can mess up the rest of the day😅

Anyway, be that as it may we are back at it and I just want to post all the dishes I did on my #PastaWeek theme uhm not on a single blog post though😝.

I don’t have all the pictures of the ingredients I used in this recipe.

I cooked spaghetti as per the instructions on its pack while grilling fish on the oven.

This was a very quick meal because after putting cheese sauce on the cooked spaghetti I tossed baby tomatoes and parsley and added my grilled fish, doesn’t it look yummy? It tasted just as good😊

Creamy Bacon Pasta #PastaWeek

Is it me or do you also struggle to stick to a “weekly meal plan”, I know with me it is because I change my mind on the very last minute so I tried having a theme rather, and on this particular week I decided to have a “pasta themed week”, I’ve always loved pasta; and as a result I thought why not have it the whole week?

Being a liker of trying out things I’ve never tried before I started with “Farfalloni”. I cooked it for 12 minutes in salted boiled water – I try not to exceed 12 minutes when making pasta because honey no one likes an overcooked pasta.

Normally my pasta dishes are paired with chicken, because I was going to do it the whole week I had to make it different so I fried mixed bell peppers, mushrooms and bacon seasoned with garlic spice, onion spice (my husband doesn’t like onion so I buy the spice rather), white pepper, aromat (we love aromat) and coriander. You can use 1/2 teaspoon measurements.

What is a creamy pasta without a cream? I started preparing it on the side: it had a spoon of flour, a spoon of cream of mushroom soup, one cup of milk and 2 spoons of cream cheese. I blended it for 30 seconds then poured it over the bacon mix.

And I lastly added my al dente pasta, to say this was the yummiest and creamiest bacon pasta would be an understatement…

Leg Quarters anyone??

I was telling my friend how I wanted to make chicken for our Sunday lunch but it had to be specifically leg quarters because I have never made them before and maybe because I needed something different on my plate for a change.

So off we went to the shops, first was Woolworths, for some reason I thought we would get them there, second stop was the butchery at The Market and strangely we could not get them there as well, my friend suggested we buy a whole chicken and cut it🤷🏽‍♀️ uhm, I asked what are we going to do with the rest of the chicken because I only wanted leg quarters 😂, we headed to our last stop – Spar and you should have seen my face when I saw them there – all fresh and ready for my oven.

We got home and I rubbed them with a barbecue and chicken rub – I wasn’t sure of the flavor I wanted so I used both. While they were being roasted in the oven I put my halved gem squashes, potatoes and eggs in a food steamer for 40 minutes.

Took out frozen peas and fresh carrots – cooked them in a vegetables stock, prepared with 1/2 cup water and a knorr vegetables pot for extra seasoning, this combination was done in less than 10 minutes.

After cooling off my potatoes and eggs I peeled, chopped and seasoned them with aromat then added Clover Cream O’Naise, Hellmann’s Mayo and whipped cream – we wanted the potato and egg salad to be extra creamy I guess. I mean with so much cream🤦🏽‍♀️

And then I stuffed the gem squash with canned sweet corn.

Leg quarters were served😋😋😋
